🍲 Fluffy Semolina Dumplings

Ingredients
- 250 ml Milk (1.5% fat)
- 50 g Soft wheat semolina
- 1 Egg
- 1 tbsp Rapeseed oil
- 1 pinch Salt
- 0.5 bunch Parsley (10 g each)
- 500 ml Vegetable broth
- 40 g Parmesan
Instructions
- 1. Pour the milk into a pot and heat it up.
- 2. Stir the milk occasionally.
- 3. Slowly add the semolina to the hot milk.
- 4. Keep stirring the mixture constantly.
- 5. Bring the mixture to a boil.
- 6. Reduce the heat to low.
- 7. Let the porridge simmer for about two minutes.
- 8. Check if a thick porridge has formed.
- 9. Remove the pot from the stove.
- 10. Let the mixture cool down briefly.
- 11. Stir the egg into the warm mixture.
- 12. Add the oil.
- 13. Add the salt.
- 14. Wash the parsley under running water.
- 15. Shake the parsley dry.
- 16. Pick the parsley leaves off the stems.
- 17. Set half of the leaves aside for decoration.
- 18. Finely chop the other half of the parsley.
- 19. Mix the chopped parsley into the mixture.
- 20. Let the mixture cool down completely.
- 21. Pour the vegetable broth into a large pot.
- 22. Bring the broth to a boil.
- 23. Get two teaspoons ready.
- 24. Form small dumplings using the spoons.
- 25. Drop the dumplings into the boiling broth.
- 26. Reduce the heat to low.
- 27. Cook the dumplings for ten to twelve minutes.
- 28. Wait until the dumplings float to the surface.
- 29. Remove the finished dumplings from the broth.
- 30. Place the dumplings on a plate.
- 31. Grate the Parmesan over the dumplings.
- 32. Garnish the dish with the remaining parsley.
