🍰 Creamy Semolina Pudding with Coconut Blossom Sugar

Ingredients
- 500 ml whole milk
- 4 tsp coconut blossom sugar
- 1 pinch salt
- 15 g butter
- 0.5 vanilla pod
- 40 g spelt whole grain semolina
- cinnamon powder (to taste)
Instructions
- 1. Pour the milk into a pot.
- 2. Add 3 teaspoons of coconut blossom sugar.
- 3. Add a pinch of salt to the milk.
- 4. Place the butter in the pot.
- 5. Heat the mixture over low heat.
- 6. Wait until the milk begins to simmer.
- 7. Split the vanilla pod lengthwise.
- 8. Scrape out the seeds using the back of a knife.
- 9. Add the empty vanilla pods to the milk.
- 10. Add the vanilla seeds to the milk.
- 11. Keep a whisk ready.
- 12. Wait just before the milk comes to a boil.
- 13. Sprinkle the semolina slowly into the milk.
- 14. Stir continuously with the whisk.
- 15. Keep stirring until the mixture comes to a boil.
- 16. Let the pudding cook for 3 to 4 minutes.
- 17. Stir constantly while it cooks.
- 18. Stop when the mixture becomes thick.
- 19. Remove the pot from the heat.
- 20. Pour the pudding into four prepared bowls.
- 21. Let the pudding cool down slightly.
- 22. Sprinkle the remaining coconut blossom sugar over the pudding.
- 23. Sprinkle cinnamon over the pudding.
- 24. Serve the pudding.
