🍳 Oat Milk Semolina Porridge with Apples and Nuts

Ingredients
- 450 ml oat drink (oat milk)
- 2 tbsp cashew nuts (10 g each)
- 2 tbsp cranberries (10 g each)
- 100 g spelt semolina
- 0.5 tsp cinnamon
- 0.25 tsp cardamom powder
- 1 apple
- 1 tbsp maple syrup
- 1 pinch vanilla powder
Instructions
- 1. Pour the oat milk into a pot and heat it over medium heat for about 5 minutes.
- 2. Meanwhile, roughly chop the cashew nuts.
- 3. Add the chopped nuts, cranberries, semolina, cinnamon, and cardamom to the warm oat milk.
- 4. Stir the mixture vigorously until it is smooth and free of lumps.
- 5. Reduce the heat to a low setting.
- 6. Let the porridge thicken while stirring constantly for 1 to 2 minutes.
- 7. Remove the pot from the heat and set the finished porridge aside.
- 8. Peel the apple and wash it thoroughly.
- 9. Remove the core and cut the flesh into small cubes.
- 10. Place the apple cubes in a pan together with maple syrup, 50 milliliters of water, and vanilla.
- 11. Sauté the apples over medium heat for about 2 to 3 minutes.
- 12. Divide the semolina porridge into two bowls.
- 13. Serve the porridge together with the warm apple compote.
