🍰 Creamy Semolina Pudding with Fresh Strawberries

Ingredients
- 400 g strawberries
- 20 g ginger
- 2 tbsp acacia honey
- 2 tbsp lemon juice
- 1 l milk (1.5% fat)
- 2 tsp turmeric powder
- 40 g whole cane sugar
- 100 g wheat semolina
- 1 egg
- 2 tbsp butter
Instructions
- 1. Remove the green stems from the strawberries and wash them thoroughly.
- 2. Cut the washed strawberries into bite-sized pieces.
- 3. Peel the ginger and grate it finely.
- 4. Mix the grated ginger with the acacia honey and lemon juice in a bowl.
- 5. Add the strawberry pieces to the ginger-honey mixture and fold them in gently.
- 6. Let the strawberry mixture sit for at least 15 minutes to allow the flavors to meld.
- 7. Pour the milk into a pot and add turmeric and sugar.
- 8. Bring the milk with the spices to a boil.
- 9. Sprinkle the semolina evenly into the boiling milk.
- 10. Stir constantly to prevent lumps from forming.
- 11. Let the pudding swell and thicken over low heat for about 5 minutes.
- 12. Remove the pot from the heat and let the semolina pudding cool for 3 minutes.
- 13. Separate an egg: Take the yolk away from the white.
- 14. Whip the egg white until it forms stiff peaks.
- 15. Stir the yolk together with the butter into the warm semolina pudding.
- 16. Gently fold the whipped egg white into the pudding to make it airy.
- 17. Fill the finished pudding into small bowls.
- 18. Let the semolina pudding cool in the bowls for another 5 minutes.
- 19. Place the marinated strawberries on top of the cooled pudding.
- 20. Serve the semolina pudding with strawberries immediately and enjoy it fresh.
