🍰 Creamy Semolina Pudding

Ingredients
- 400 ml Milk
- 125 g Sugar
- 90 g Semolina
- 1 Vanilla pod (seeds)
- 4 Eggs (separated)
- Butter (for the ramekins)
Instructions
- 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
- 2. Mix the milk with the sugar and the vanilla seeds in a pot.
- 3. Bring the milk mixture to a boil.
- 4. Stir in the semolina and let it swell.
- 5. Remove the pot from the heat.
- 6. Gently mix the egg yolks into the semolina mixture.
- 7. Whip the egg whites with a pinch of salt until stiff.
- 8. Gently fold the egg whites into the semolina mixture.
- 9. Grease four ovenproof ramekins with butter.
- 10. Distribute the mixture into the ramekins and smooth the tops.
- 11. Place the ramekins in a baking tray filled with hot water.
- 12. Bake the pudding in the oven for 40 to 45 minutes.
- 13. Remove the pudding from the oven and let it cool down briefly.
- 14. Carefully turn out the pudding from the ramekins.
