  1. 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
  2. 2. Mix the milk with the sugar and the vanilla seeds in a pot.
  3. 3. Bring the milk mixture to a boil.
  4. 4. Stir in the semolina and let it swell.
  5. 5. Remove the pot from the heat.
  6. 6. Gently mix the egg yolks into the semolina mixture.
  7. 7. Whip the egg whites with a pinch of salt until stiff.
  8. 8. Gently fold the egg whites into the semolina mixture.
  9. 9. Grease four ovenproof ramekins with butter.
  10. 10. Distribute the mixture into the ramekins and smooth the tops.
  11. 11. Place the ramekins in a baking tray filled with hot water.
  12. 12. Bake the pudding in the oven for 40 to 45 minutes.
  13. 13. Remove the pudding from the oven and let it cool down briefly.
  14. 14. Carefully turn out the pudding from the ramekins.
