🥗 Fresh Greek Salad with Grilled Chicken

Ingredients
- 1 cucumber
- 4 tomatoes
- 2 red onions
- 1 red bell pepper
- 0.5 romaine lettuce
- 150 g black olives
- 220 g mild feta cheese
- 3 tbsp red wine vinegar
- 6 tbsp olive oil
- salt
- pepper (from the mill)
- 1 pinch sugar
- 400 g chicken breast fillet
- 3 tbsp lemon juice
- 2 tbsp olive oil (for frying)
- basil (for garnish)
Instructions
- 1. Wash the cucumber under hot water and pat it dry.
- 2. Slice the cucumber with the skin into rounds.
- 3. Wash the tomatoes and cut them into wedges.
- 4. Peel the onions and cut them into wedges as well.
- 5. Remove the tough stems from the romaine lettuce, wash it, and tear it into bite-sized pieces.
- 6. Wash the bell pepper, remove the inside, and cut it into strips.
- 7. Whisk vinegar, oil, sugar, salt, and pepper together in a bowl to make a marinade.
- 8. Place the romaine lettuce leaves in the center of a large salad plate.
- 9. Drizzle half of the marinade over the lettuce in the center.
- 10. Mix the remaining salad ingredients (cucumber, tomatoes, onions, pepper) in a separate bowl.
- 11. Pour the remaining marinade over the vegetables and toss well.
- 12. Place the marinated vegetables on top of the lettuce in the center of the plate.
- 13. Pat the chicken breast fillet pieces dry with kitchen paper.
- 14. Season the chicken with salt and pepper.
- 15. Heat oil in a grill pan.
- 16. Fry the chicken on both sides for about 4 minutes each in the hot pan.
- 17. Place the grilled chicken on top of the salad.
- 18. Drizzle the dish with lemon juice.
- 19. Crumble the feta cheese over the salad.
- 20. Garnish the salad with fresh basil and serve.
