🥗 Fresh Greek Rice Salad

Ingredients
- 200 g brown rice
- sea salt
- 200 g cherry tomatoes
- 50 g black olives (pitted)
- 2 spring onions
- 1 cucumber
- 200 g feta cheese (9% fat absolute)
- 4 tbsp lemon juice
- 1 tsp honey
- 6 tbsp olive oil (60 ml)

Instructions
- 1. Boil water in a pot and add salt.
- 2. Cook the rice in the boiling salted water for exactly the time stated on the package.
- 3. Let the cooked rice cool down.
- 4. Wash the tomatoes thoroughly.
- 5. Cut the tomatoes in half.
- 6. Chop the olives coarsely.
- 7. Wash the spring onions.
- 8. Remove the tough ends of the spring onions.
- 9. Slice the spring onions into thin rings.
- 10. Wash the cucumber.
- 11. Cut the cucumber in half lengthwise.
- 12. Remove the seeds from the cucumber.
- 13. Cut the cucumber into small cubes.
- 14. Crumble the feta cheese with your hands.
- 15. Put all the prepared ingredients into a large bowl.
- 16. Add lemon juice, honey, and olive oil to the bowl.
- 17. Mix everything gently until well combined.
- 18. Season the salad with salt and pepper to taste.
- 19. Serve the salad immediately.
