  3. 3. Stir the yeast until it has completely dissolved.
  4. 4. Chop the lard (rendered pork fat) very finely with a sharp knife.
  5. 5. Sift the flour into a large bowl.
  6. 6. Add the chopped lard, the egg, the salt, the wine, and the yeast milk.
  7. 7. Knead everything into a medium-firm yeast dough.
  8. 8. Place the dough on a work surface lightly dusted with flour.
  9. 9. Knead the dough vigorously by hand.
  10. 10. Roll out the dough several times and fold it back together.
  11. 11. Cover the dough.
  12. 12. Let the dough rise in a warm, draft-free place for about 30 minutes.
  13. 13. Roll the dough on a floured surface to a height of about 2 to 3 centimeters.
  14. 14. Use a ring cutter (4 cm diameter) to cut out small round pieces of dough.
  15. 15. Place the dough pieces on a baking sheet lined with baking paper.
  16. 16. Let the dough pieces rise for another 30 minutes.
  17. 17. Preheat the oven.
  18. 18. Whisk the egg yolk with a few drops of water to create a brushing liquid.
  19. 19. Brush the surface of the dough pieces with this mixture.
  20. 20. Score the surface of the dough pieces in a cross pattern with a sharp knife.
  21. 21. Bake the dough pieces in the preheated oven at 210 degrees Celsius for about 15 to 20 minutes until golden brown.
