🍽️ Crispy Lard Hefeklöße

Ingredients
- 150 g Greaves lard
- 150 g Flour
- 20 g Yeast (0.5 cube)
- 3 tbsp Milk
- 2 tbsp Sour cream
- 1 Egg
- 1 tbsp Wine
- 1 tsp Salt
- 1 tsp Cumin
- Egg yolk (for brushing)
- Flour (for the work surface)
Instructions
- 1. Warm the milk slightly until it is lukewarm.
- 2. Crumble the yeast into the warm milk.
- 3. Stir the yeast until it has completely dissolved.
- 4. Chop the lard (rendered pork fat) very finely with a sharp knife.
- 5. Sift the flour into a large bowl.
- 6. Add the chopped lard, the egg, the salt, the wine, and the yeast milk.
- 7. Knead everything into a medium-firm yeast dough.
- 8. Place the dough on a work surface lightly dusted with flour.
- 9. Knead the dough vigorously by hand.
- 10. Roll out the dough several times and fold it back together.
- 11. Cover the dough.
- 12. Let the dough rise in a warm, draft-free place for about 30 minutes.
- 13. Roll the dough on a floured surface to a height of about 2 to 3 centimeters.
- 14. Use a ring cutter (4 cm diameter) to cut out small round pieces of dough.
- 15. Place the dough pieces on a baking sheet lined with baking paper.
- 16. Let the dough pieces rise for another 30 minutes.
- 17. Preheat the oven.
- 18. Whisk the egg yolk with a few drops of water to create a brushing liquid.
- 19. Brush the surface of the dough pieces with this mixture.
- 20. Score the surface of the dough pieces in a cross pattern with a sharp knife.
- 21. Bake the dough pieces in the preheated oven at 210 degrees Celsius for about 15 to 20 minutes until golden brown.
