  1. 1. Peel the potatoes and cut them into large cubes. Also peel the onion and garlic and chop them very finely.
  2. 2. Clean the spinach and wash it thoroughly. Also wash the mint, shake it dry, and pluck off the leaves. Then chop both roughly.
  3. 3. Heat the olive oil in a pot. Add the onions and garlic and fry them over high heat for 1 to 2 minutes until translucent. Then add the potatoes and fry for another 3 minutes.
  4. 4. Reduce the heat. Add the peas, mint, and vegetable broth. Stir everything and bring it to a boil.
  5. 5. Now add the spinach to the pot and simmer the soup for about 10 minutes until the potatoes are tender. Puree everything finely with a hand blender until no chunks remain.
  6. 6. Finally, season the soup with 130 ml of coconut milk, salt, pepper, and nutmeg. Divide the soup onto plates and decorate with the remaining coconut milk.
