🍲 Green Power Soup

Ingredients
- 250 g starchy potatoes
- 1 onion
- 1 garlic clove
- 400 g spinach
- 15 g mint
- 2 tbsp olive oil
- 280 g peas (shelled)
- 1 l vegetable broth
- 150 ml coconut milk
- salt
- pepper
- nutmeg
Instructions
- 1. Peel the potatoes and cut them into large cubes. Also peel the onion and garlic and chop them very finely.
- 2. Clean the spinach and wash it thoroughly. Also wash the mint, shake it dry, and pluck off the leaves. Then chop both roughly.
- 3. Heat the olive oil in a pot. Add the onions and garlic and fry them over high heat for 1 to 2 minutes until translucent. Then add the potatoes and fry for another 3 minutes.
- 4. Reduce the heat. Add the peas, mint, and vegetable broth. Stir everything and bring it to a boil.
- 5. Now add the spinach to the pot and simmer the soup for about 10 minutes until the potatoes are tender. Puree everything finely with a hand blender until no chunks remain.
- 6. Finally, season the soup with 130 ml of coconut milk, salt, pepper, and nutmeg. Divide the soup onto plates and decorate with the remaining coconut milk.
