  1. 1. Heat a large pan or pot over medium-high heat.
  2. 2. Add some oil to the hot pan.
  3. 3. Peel the onions and garlic.
  4. 4. Dice the onions and garlic into very small cubes.
  5. 5. Sauté the onions and garlic in the oil until they are soft and translucent.
  6. 6. Stir turmeric and cumin into the onion mixture.
  7. 7. Deglaze the pan with the vegetable broth.
  8. 8. Add the pearl barley (small, hulled barley grains) to the broth.
  9. 9. Let the stew simmer gently on low heat for about 20 minutes.
  10. 10. Add the lentils to the pot.
  11. 11. Simmer everything together for another 20 minutes until the lentils are tender.
  12. 12. If the liquid evaporates too quickly, add more broth as needed.
  13. 13. Finely chop the fresh parsley and add it to the stew.
  14. 14. Season the stew to taste with salt and pepper.
  15. 15. Serve the stew with fried tofu and fresh bread as desired.
