  1. 1. Dice the pumpkin flesh into small cubes. Wash the bell peppers, remove the stems and seeds, cut them into thin strips, and then into small diamond shapes. Wash the celery and chop it finely.
  2. 2. Heat the butter in a tall pot. Add the chopped vegetables and tomato paste, and fry everything for 3 minutes.
  3. 3. Deglaze with hot vegetable broth and add the pearl barley. Bring the mixture to a boil, reduce the heat, and let the stew simmer for about 25 minutes until the barley and vegetables are tender.
  4. 4. Season the dish at the end with salt, pepper, and a pinch of ground nutmeg. Stir in some fruit vinegar. Garnish with dill sprigs and serve the stew.
