🍽️ Pearl Barley Vegetable Soup

Ingredients
- 1 onion
- 1 garlic clove
- 1 carrot
- 125 g celeriac
- 100 g pearl barley
- 2 tsp oil
- salt
- pepper (from the mill)
- nutmeg
- 1.2 l vegetable broth (instant)
- 50 g Bündnerfleisch (in thin slices)
- 1 tbsp parsley
Instructions
- 1. Dice the onion, garlic, and vegetables into very small cubes. Sauté the vegetables together with the pearl barley in oil. Season with salt, pepper, and nutmeg, add the broth, and let the soup simmer on low heat for 25 minutes. Cut the Bresaola (air-dried salted beef) into strips.
- 2. Serve the pearl barley vegetable soup in bowls, top with the Bresaola strips, and garnish with chopped parsley.
