🍽️ Cod Fillet Gratin with Green Beans

Ingredients
- 3 slices toast bread
- 4 dried tomatoes (preserved in oil)
- 1 pinch oregano (dried)
- 60 g butter
- 4 cod fillets (approx. 160 g each)
- 2 tbsp lemon juice
- salt
- pepper
- 1 sprig savory
- 300 g princess beans
- 200 g snow peas
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Place the toast bread into a food processor.
- 3. Process the bread until it forms fine crumbs.
- 4. Roughly chop the tomatoes.
- 5. Mix the chopped tomatoes with the bread crumbs.
- 6. Add the oregano and the softened butter to the mixture.
- 7. Knead everything together until it forms a uniform paste.
- 8. Drizzle lemon juice over the cod fillets.
- 9. Season the fish with salt and pepper.
- 10. Spread the crumb mixture evenly over the fillets.
- 11. Place the fillets on a baking sheet lined with baking paper.
- 12. Bake the dishes for about 20 minutes in the preheated oven.
- 13. Meanwhile, trim the green beans and the snow peas.
- 14. Cook the green beans with the savory herb in boiling salted water.
- 15. Cook the beans for 8 to 10 minutes until tender but firm.
- 16. Add the snow peas 1 to 2 minutes before the end of the cooking time.
- 17. Drain the vegetables and let them drip dry.
- 18. Remove the savory herb from the vegetables.
- 19. Divide the warm vegetables among preheated plates.
- 20. Place the cooked fish fillets on top of the vegetables.
- 21. Serve the dish immediately.
