  1. 1. Preheat your oven to 200 degrees Celsius.
  2. 2. Mix flour, eggs, ground nutmeg, and a pinch of salt in a large bowl until you have a smooth dough.
  3. 3. Add water gradually to the dough until it is thick and flows slowly off the spoon.
  4. 4. Let the dough rest for 30 minutes.
  5. 5. Peel the shallots and slice them into thin strips.
  6. 6. Wash the apple, cut it into quarters, remove the core, and slice it thinly.
  7. 7. Grate the cheese finely and set it aside.
  8. 8. Bring plenty of salted water to a boil in a large pot.
  9. 9. Shave the spätzle dough into the boiling water in portions, or spoon small pieces from the board into the water.
  10. 10. Remove the cooked spätzles with a slotted spoon and rinse them briefly with cold water.
  11. 11. Drain the spätzles well and toss them briefly in hot butter.
  12. 12. Layer the spätzles alternately with the shallots, apple slices, and two-thirds of the grated cheese in a baking dish.
  13. 13. Whisk cream, vegetable broth, and eggs together in a separate bowl.
  14. 14. Season the liquid with salt and pepper to taste.
  15. 15. Finely chop the chives and stir them into the cream-egg mixture.
  16. 16. Pour the liquid evenly over the layers in the baking dish.
  17. 17. Sprinkle the remaining grated cheese over the casserole.
  18. 18. Bake the casserole for about 25 minutes in the preheated oven until golden brown and crispy.
  19. 19. Serve the casserole hot, garnished with some horseradish.
