🍽️ Crispy Spätzle Casserole with Apple

Ingredients
- 400 g flour
- 5 eggs
- nutmeg
- salt
- 2 shallots
- 1 tart apple (e.g. Granny Smith)
- 150 g Emmental cheese
- 2 tbsp butter
- 200 ml whipping cream (at least 30% fat content)
- 100 ml vegetable broth
- 2 eggs
- 2 tbsp chive rings
- 1 tbsp freshly grated horseradish
Instructions
- 1. Preheat your oven to 200 degrees Celsius.
- 2. Mix flour, eggs, ground nutmeg, and a pinch of salt in a large bowl until you have a smooth dough.
- 3. Add water gradually to the dough until it is thick and flows slowly off the spoon.
- 4. Let the dough rest for 30 minutes.
- 5. Peel the shallots and slice them into thin strips.
- 6. Wash the apple, cut it into quarters, remove the core, and slice it thinly.
- 7. Grate the cheese finely and set it aside.
- 8. Bring plenty of salted water to a boil in a large pot.
- 9. Shave the spätzle dough into the boiling water in portions, or spoon small pieces from the board into the water.
- 10. Remove the cooked spätzles with a slotted spoon and rinse them briefly with cold water.
- 11. Drain the spätzles well and toss them briefly in hot butter.
- 12. Layer the spätzles alternately with the shallots, apple slices, and two-thirds of the grated cheese in a baking dish.
- 13. Whisk cream, vegetable broth, and eggs together in a separate bowl.
- 14. Season the liquid with salt and pepper to taste.
- 15. Finely chop the chives and stir them into the cream-egg mixture.
- 16. Pour the liquid evenly over the layers in the baking dish.
- 17. Sprinkle the remaining grated cheese over the casserole.
- 18. Bake the casserole for about 25 minutes in the preheated oven until golden brown and crispy.
- 19. Serve the casserole hot, garnished with some horseradish.
