🍽️ Oven-Baked Ricotta Spinat Dumplings

Ingredients
- 500 g spinach
- 200 g ricotta
- 150 g parmesan (grated)
- 2 eggs
- 75 g flour
- 75 g almond kernels
- salt
- pepper (freshly ground)
- nutmeg
- 50 g butter
- 3 tbsp sliced almonds
Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove all tough stems and wilted leaves.
- 3. Bring a large pot of salted water to a boil.
- 4. Add the spinach to the boiling water.
- 5. Cook the spinach until it has wilted.
- 6. Drain the spinach.
- 7. Shock the spinach immediately with cold water.
- 8. Let the spinach drip dry well.
- 9. Squeeze the spinach firmly to remove excess moisture.
- 10. Chop the spinach finely.
- 11. Take a large bowl.
- 12. Add the ricotta to the bowl.
- 13. Add the chopped spinach.
- 14. Add the eggs.
- 15. Take two-thirds of the amount of cheese.
- 16. Add this portion of cheese to the mixture.
- 17. Mix all ingredients in the bowl.
- 18. Add the flour to the mixture.
- 19. Add the ground almonds.
- 20. Season the mixture with salt.
- 21. Season the mixture with pepper.
- 22. Season the mixture with ground nutmeg.
- 23. Take two teaspoons for shaping.
- 24. Form small dumplings from the mixture.
- 25. Place the dumplings on a lightly floured board.
- 26. Bring a pot with plenty of salted water to a boil.
- 27. Add the dumplings to the boiling water.
- 28. Reduce the heat so the water is no longer boiling vigorously.
- 29. Cook the dumplings for about 5 minutes.
- 30. Lift the dumplings carefully out of the water.
- 31. Let the dumplings drip dry.
- 32. Grease a baking dish.
- 33. Place the dumplings side by side in the dish.
- 34. Sprinkle the dumplings with sliced almonds.
- 35. Take the butter.
- 36. Divide the butter into small pieces.
- 37. Distribute the butter pieces on the dumplings.
- 38. Preheat the oven grill.
- 39. Place the dish under the hot grill.
- 40. Bake the dumplings for about 4 minutes.
- 41. Take the remaining Parmesan.
- 42. Sprinkle the Parmesan over the dumplings.
- 43. Serve the dumplings.
