  1. 1. Preheat the oven to 80 degrees Celsius with top and bottom heat.
  2. 2. Whisk the eggs and flour together in a bowl.
  3. 3. Stir the milk into the egg and flour mixture.
  4. 4. Season the batter with salt and pepper.
  5. 5. Let the batter rest for 20 minutes.
  6. 6. Wash the spinach and shake off excess water.
  7. 7. Place the spinach in a pot and cover it.
  8. 8. Cook the spinach over high heat until it wilts.
  9. 9. Place the spinach in a sieve and let it drain.
  10. 10. Peel the onions and garlic.
  11. 11. Finely chop the onions and garlic.
  12. 12. Heat 1 tablespoon of olive oil in a pan.
  13. 13. Fry the onions and garlic in the pan.
  14. 14. Chop the drained spinach.
  15. 15. Add the chopped spinach to the onion mixture in the pan.
  16. 16. Season the filling with nutmeg, salt, and pepper.
  17. 17. Allow the filling to cool down.
  18. 18. Puree the cooled filling until smooth.
  19. 19. Crumble the ricotta finely.
  20. 20. Mix the ricotta with the spinach filling.
  21. 21. Add half of the Parmesan to the filling.
  22. 22. Stir the egg yolk into the filling.
  23. 23. Taste the filling and adjust seasoning if needed.
  24. 24. Heat butter in a non-stick pan.
  25. 25. Bake 12 pancakes one after the other from the batter.
  26. 26. Keep the finished pancakes warm in the oven.
  27. 27. Take the pancakes out of the oven when the last one is done.
  28. 28. Increase the oven temperature to 200 degrees Celsius with top and bottom heat.
  29. 29. Place a warm pancake on a cutting board.
  30. 30. Spread the filling onto the pancake.
  31. 31. Roll up the filled pancake.
  32. 32. Repeat this with all pancakes.
  33. 33. Place the rolled pancakes side by side in a greased baking dish.
  34. 34. Sprinkle the remaining Parmesan over the pancakes.
  35. 35. Place the baking dish in the preheated oven.
  36. 36. Bake the pancakes for approx. 20 minutes.
  37. 37. Grind fresh pepper over the finished pancakes.
  38. 38. Serve the pancakes hot.
