🍽️ Baked Pancakes with Spinach and Ricotta Filling

Ingredients
- 4 Eggs
- 350 g Flour
- 500 ml Milk
- Salt
- Pepper (from the mill)
- Butter (for frying)
- 350 g Spinach
- 1 Onion
- 2 Garlic cloves
- Olive oil
- Nutmeg
- Salt

- 350 g dry Ricotta (or Feta)
- 2 tbsp finely grated Parmesan
- 1 Egg yolk
- 200 g grated Gouda (or Butter cheese)
Instructions
- 1. Preheat the oven to 80 degrees Celsius with top and bottom heat.
- 2. Whisk the eggs and flour together in a bowl.
- 3. Stir the milk into the egg and flour mixture.
- 4. Season the batter with salt and pepper.
- 5. Let the batter rest for 20 minutes.
- 6. Wash the spinach and shake off excess water.
- 7. Place the spinach in a pot and cover it.
- 8. Cook the spinach over high heat until it wilts.
- 9. Place the spinach in a sieve and let it drain.
- 10. Peel the onions and garlic.
- 11. Finely chop the onions and garlic.
- 12. Heat 1 tablespoon of olive oil in a pan.
- 13. Fry the onions and garlic in the pan.
- 14. Chop the drained spinach.
- 15. Add the chopped spinach to the onion mixture in the pan.
- 16. Season the filling with nutmeg, salt, and pepper.
- 17. Allow the filling to cool down.
- 18. Puree the cooled filling until smooth.
- 19. Crumble the ricotta finely.
- 20. Mix the ricotta with the spinach filling.
- 21. Add half of the Parmesan to the filling.
- 22. Stir the egg yolk into the filling.
- 23. Taste the filling and adjust seasoning if needed.
- 24. Heat butter in a non-stick pan.
- 25. Bake 12 pancakes one after the other from the batter.
- 26. Keep the finished pancakes warm in the oven.
- 27. Take the pancakes out of the oven when the last one is done.
- 28. Increase the oven temperature to 200 degrees Celsius with top and bottom heat.
- 29. Place a warm pancake on a cutting board.
- 30. Spread the filling onto the pancake.
- 31. Roll up the filled pancake.
- 32. Repeat this with all pancakes.
- 33. Place the rolled pancakes side by side in a greased baking dish.
- 34. Sprinkle the remaining Parmesan over the pancakes.
- 35. Place the baking dish in the preheated oven.
- 36. Bake the pancakes for approx. 20 minutes.
- 37. Grind fresh pepper over the finished pancakes.
- 38. Serve the pancakes hot.
