  1. 1. Thoroughly rinse the mussels under running water.
  2. 2. Fill a pot with 2 to 3 centimeters of salted water and bring it to a boil.
  3. 3. Place the mussels in the boiling water and cover the pot with a lid.
  4. 4. Cook the mussels for about 5 minutes until all shells have opened.
  5. 5. Remove any mussels that are still closed after cooking and discard them.
  6. 6. Carefully separate the mussel meat from the empty shell half.
  7. 7. Place the shell halves with the meat inside side by side in an ovenproof dish.
  8. 8. Switch the oven to the grill function and preheat it.
  9. 9. Peel the garlic clove and the piece of ginger.
  10. 10. Mince the garlic and ginger as finely as possible.
  11. 11. Melt the butter in a pot over medium heat.
  12. 12. Add the minced garlic and ginger to the butter and sauté until translucent.
  13. 13. Dust the mixture with flour and stir in the curry powder.
  14. 14. Let the spice mixture sweat briefly while stirring.
  15. 15. Pour in the wine and coconut milk while stirring continuously.
  16. 16. Let the sauce simmer gently for about 5 minutes until it becomes creamy.
  17. 17. Season the sauce to taste with salt, chili, and lime juice.
  18. 18. Distribute the sauce evenly over the mussels in the dish.
  19. 19. Place the dish under the hot grill and bake the mussels for about 5 minutes until gratinated.
  20. 20. Remove the dish from the oven and immediately sprinkle the mussels with chives.
