🍽️ Baked Green Beans with Spelt and Blue Cheese

Ingredients

- 300 g green beans (frozen)
- 400 ml classic vegetable broth
- 1 tsp dried thyme
- 100 g spelt whole grain semolina
- 60 g blue cheese (50% fat)
- Pepper
Instructions
- 1. Fill a large pot with water and bring it to a boil.
- 2. Salt the water generously.
- 3. Add the green beans to the boiling water.
- 4. Cook the beans for 8 minutes over medium heat with the lid on.
- 5. Bring vegetable broth and thyme to a boil in a saucepan.
- 6. Stir in the spelt semolina while stirring constantly.
- 7. Let the mixture come to a boil.
- 8. Reduce the heat to low and let the semolina swell for about 8 minutes with the lid on.
- 9. Stir the semolina occasionally while it swells.
- 10. Cut the blue cheese into small cubes.
- 11. Drain the cooked beans in a colander.
- 12. Season the spelt semolina with salt and pepper to taste.
- 13. Place the seasoned semolina into a shallow baking dish.
- 14. Spread the drained beans as a wide strip over the semolina.
- 15. Scatter the blue cheese cubes evenly over the top.
- 16. Preheat the oven with the grill function.
- 17. Place the baking dish on the middle rack under the grill.
- 18. Gratin the dish for 2 to 3 minutes until the cheese has melted.
- 19. Remove the dish from the oven.
- 20. Sprinkle the finished dish with a little fresh pepper.
