  3. 3. Dice the bell pepper flesh into very small cubes.
  4. 4. Wash the spring onions and remove the dry ends.
  5. 5. Slice the spring onions into thin rings.
  6. 6. Drain the sauerkraut well in a sieve.
  7. 7. Finely chop the drained sauerkraut.
  8. 8. Remove the sausage meat from the bratwurst casings and place it in a bowl.
  9. 9. Add the quark to the sausage meat.
  10. 10. Stir the mixture until smooth, ensuring the quark and meat are well combined.
  11. 11. Fold in the diced bell pepper.
  12. 12. Fold in the spring onion rings.
  13. 13. Fold in the chopped sauerkraut.
  14. 14. Wash the tomatoes thoroughly.
  15. 15. Cut out the hard stem areas of the tomatoes in a wedge shape.
  16. 16. Slice the tomatoes into even slices.
  17. 17. Spread the bread slices thinly with mustard.
  18. 18. Cut the mustard-spread bread slices diagonally in half.
  19. 19. Top the bread halves with the tomato slices.
  20. 20. Line a baking tray with baking paper.
  21. 21. Arrange the topped bread slices on the tray.
  22. 22. Spread the meat and vegetable mixture evenly over the bread.
  23. 23. Preheat the oven to 200 degrees Celsius conventional heat.
