🍽️ Crunchy Gratinated Oysters

Ingredients
- 16 oysters
- 1 sprig parsley
- 2 sprigs thyme
- 1 sprig mint
- 80 g breadcrumbs
- 0.5 tsp lemon zest
- 100 g butter
- salt
- pepper (from the mill)
- sea salt
- lemon wedges (for garnishing)
Instructions
- 1. Turn on the grill function of your oven and preheat it.
- 2. Carefully open the oyster shells.
- 3. Separate the meat from the shell.
- 4. Place the meat back into one of the shell halves.
- 5. Rinse the fresh herbs under running water.
- 6. Shake the herbs dry.
- 7. Pluck the leaves or needles from the stems.
- 8. Finely chop the herbs.
- 9. Grate the lemon peel to get the zest.
- 10. Mix the chopped herbs with the breadcrumbs and lemon zest in a bowl.
- 11. Melt the butter in a small pot or in the microwave.
- 12. Pour the melted butter over the breadcrumb mixture.
- 13. Season the mixture with salt and pepper.
- 14. Check the consistency of the breadcrumb mixture.
- 15. If the mixture looks too dry, stir in a little more melted butter.
- 16. Spread a layer of sea salt into a fireproof baking dish.
- 17. Place the oysters upright on the salt bed.
- 18. Distribute the breadcrumb mixture evenly over each oyster.
- 19. Place the baking dish into the preheated oven.
- 20. Gratin the oysters for 3 to 4 minutes until they are golden brown.
- 21. Cut a lemon into wedges.
- 22. Arrange the gratinated oysters in a box or on plates.
- 23. Serve the oysters with the lemon wedges as a side.
