  1. 1. Turn on the grill function of your oven and preheat it.
  2. 2. Carefully open the oyster shells.
  3. 3. Separate the meat from the shell.
  4. 4. Place the meat back into one of the shell halves.
  5. 5. Rinse the fresh herbs under running water.
  6. 6. Shake the herbs dry.
  7. 7. Pluck the leaves or needles from the stems.
  8. 8. Finely chop the herbs.
  9. 9. Grate the lemon peel to get the zest.
  10. 10. Mix the chopped herbs with the breadcrumbs and lemon zest in a bowl.
  11. 11. Melt the butter in a small pot or in the microwave.
  12. 12. Pour the melted butter over the breadcrumb mixture.
  13. 13. Season the mixture with salt and pepper.
  14. 14. Check the consistency of the breadcrumb mixture.
  15. 15. If the mixture looks too dry, stir in a little more melted butter.
  16. 16. Spread a layer of sea salt into a fireproof baking dish.
  17. 17. Place the oysters upright on the salt bed.
  18. 18. Distribute the breadcrumb mixture evenly over each oyster.
  19. 19. Place the baking dish into the preheated oven.
  20. 20. Gratin the oysters for 3 to 4 minutes until they are golden brown.
  21. 21. Cut a lemon into wedges.
  22. 22. Arrange the gratinated oysters in a box or on plates.
  23. 23. Serve the oysters with the lemon wedges as a side.
