  1. 1. Wash the spinach, remove any damaged leaves, and fry it in one tablespoon of olive oil in a pan, stirring until it wilts and the water has evaporated. Season with pepper.
  2. 2. Remove the spinach from the pan and chop it finely.
  3. 3. Open the oysters, clean them, carefully separate them from their shells, and place them on a plate.
  4. 4. Collect the oyster liquid that comes out, then pour it through a fine sieve to clarify it.
  5. 5. Clean the deep oyster shells thoroughly.
  6. 6. Whisk together olive oil, the strained oyster liquid, and lemon juice, and season the mixture with pepper.
  7. 7. Place the oysters back into their shells, distribute the chopped spinach on top, and drizzle the sauce over them. Bake them in the preheated oven at 220 degrees Celsius for about 5 minutes.
