🍽️ Baked Eggplant Towers

Ingredients
- 2 medium eggplants
- salt
- 6 tbsp olive oil
- 2 beef tomatoes
- 1 ball mozzarella
- pepper (from a mill)
- basil
Instructions
- 1. Wash the eggplants thoroughly.
- 2. Cut the eggplants crosswise into slices about 1 cm thick.
- 3. Sprinkle the slices with salt.
- 4. Let the salted slices rest for 20 minutes.
- 5. Heat some olive oil in a non-stick pan.
- 6. Pat the eggplant slices dry with a kitchen towel.
- 7. Fry the slices in batches for about 5 minutes on each side until golden brown.
- 8. Cut the tomatoes into 1 cm thick slices.
- 9. Cut the mozzarella into slices about 4 mm thick.
- 10. Grease a baking dish lightly.
- 11. Place half of the fried eggplant slices in the dish.
- 12. Place one tomato slice on top of the eggplants.
- 13. Season the layer with salt and pepper.
- 14. Place one basil leaf on each tomato slice.
- 15. Cover the layer with the remaining eggplant slices.
- 16. Place one mozzarella slice on each eggplant.
- 17. Lightly salt the cheese slices.
- 18. Drizzle the towers with a little oil.
- 19. Preheat the oven to 200 degrees.
- 20. Bake the towers in the center of the oven for about 15 minutes.
- 21. Remove the towers when the mozzarella is lightly browned.
- 22. Serve the eggplants warm or cold.
