🥗 Grapefruit Salad with Pistachio Dressing

Ingredients
- 450 g lettuce hearts
- 2 grapefruits
- 1 bunch cilantro
- 2 garlic cloves
- 0.5 red chili pepper
- 2 limes
- 1 avocado
- 1 pinch salt
- 75 ml olive oil
- 2 handfuls American pistachios (shelled)
Instructions
- 1. Wash the lettuce hearts thoroughly and pat them dry. Cut them into small, bite-sized pieces. Peel the grapefruits, add them to the salad, and arrange everything on the plates.
- 2. Wash the coriander and shake off excess water. Put 30 grams of coriander into a food processor. Peel the garlic and add it to the machine along with the chili.
- 3. Squeeze the limes and scoop out the avocado flesh. Add both to the food processor along with a pinch of salt, the olive oil, and a handful of pistachios. Blend everything into a creamy dressing.
- 4. Roughly chop the remaining pistachios and coriander. Drizzle the dressing over the salad and garnish with the chopped coriander and pistachios.
