  1. 1. Wash the lettuce hearts thoroughly and pat them dry. Cut them into small, bite-sized pieces. Peel the grapefruits, add them to the salad, and arrange everything on the plates.
  2. 2. Wash the coriander and shake off excess water. Put 30 grams of coriander into a food processor. Peel the garlic and add it to the machine along with the chili.
  3. 3. Squeeze the limes and scoop out the avocado flesh. Add both to the food processor along with a pinch of salt, the olive oil, and a handful of pistachios. Blend everything into a creamy dressing.
  4. 4. Roughly chop the remaining pistachios and coriander. Drizzle the dressing over the salad and garnish with the chopped coriander and pistachios.
