🍽️ Crunchy Granola Bars

Ingredients
- 160 g mixed seeds (flaxseeds, sunflower seeds, hemp seeds, pumpkin seeds)
- 120 g almond kernels
- 60 g pistachios
- 60 g rolled oats
- 40 g raisins (sugar-free and sulfur-free)
- 40 g dried cranberries (sugar-free and sulfur-free)
- 80 g maple syrup
- 70 g almond butter
- 50 g coconut oil
- 30 g cacao nibs (3 tbsp)
- 1 pinch salt
Instructions
- 1. Finely chop the seeds and kernels.
- 2. Mix the chopped seeds and kernels with the oat flakes.
- 3. Spread the mixture evenly on a baking sheet.
- 4. Preheat the oven to 200 °C (180 °C with fan or gas mark 3).
- 5. Roast the oat mixture in the oven for about 10 minutes.
- 6. Remove the tray from the oven.
- 7. Let the roasted mixture cool down completely for 10 minutes.
- 8. Melt the coconut oil in a small saucepan over low heat for 2 minutes.
- 9. Add all remaining ingredients to a large bowl.
- 10. Pour the melted coconut oil over the ingredients.
- 11. Mix everything thoroughly.
- 12. Line a baking dish (25 x 35 cm) with baking paper.
- 13. Place the granola mixture into the prepared dish.
- 14. Distribute the mixture evenly with a spoon.
- 15. Cover the dish with cling film.
- 16. Press the mixture firmly and tightly into the dish with your hands.
- 17. Place the dish in the freezer compartment for 1 hour.
- 18. Cut the cooled and firm mass into bars.
- 19. Serve the bars.
- 20. Store the bars in the refrigerator or freezer to keep them fresh.
