  1. 1. Rinse the beans under cold running water and let them drain well.
  2. 2. Place the beans, hemp seed flour, soy drink, almond butter, and spices into a mixing bowl.
  3. 3. Blend the mixture with a hand blender until a soft dough forms.
  4. 4. Stir in the oat flakes and 60 grams of the hemp seeds into the dough.
  5. 5. Season the dough with salt and pepper to taste.
  6. 6. Moisten your hands with a little water and shape 12 small balls from the mixture.
  7. 7. Preheat your oven to 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3).
  8. 8. Place the balls on a baking sheet and bake them for 15 to 20 minutes until golden brown.
  9. 9. Turn the balls over halfway through the baking time.
  10. 10. Remove the outer leaves from the Brussels sprouts and wash them thoroughly.
  11. 11. Cut the washed Brussels sprouts in half.
  12. 12. Peel the carrots and slice them into thin diagonal pieces.
  13. 13. Heat two tablespoons of olive oil in a large frying pan.
  14. 14. Sauté the Brussels sprout halves over medium heat for three minutes.
  15. 15. Add the carrot slices and cook them together for another two minutes.
  16. 16. Season the vegetables with salt and pepper and remove them from the heat.
  17. 17. Peel one of the oranges and cut the flesh into fine segments.
  18. 18. Squeeze the juice from the second halved orange.
  19. 19. Clean and wash the chicory and Chinese cabbage.
  20. 20. Cut the vegetables into thin strips.
  21. 21. Toss the cut vegetables with the remaining oil and the orange juice.
  22. 22. Season the salad with salt and pepper to taste.
  23. 23. Divide the salad among four serving bowls.
  24. 24. Top the salad with the baked hemp seed balls, Brussels sprouts, carrots, and orange segments.
  25. 25. Sprinkle the remaining hemp seeds over the finished bowl.
