🍽️ Winter Bowl with Hemp Seed Balls

Ingredients
- 400 g white beans (white giant beans; can, drained weight)
- 40 g hemp seed flour (6 tbsp)
- 70 ml soy drink (soy milk)
- 90 g white almond butter (6 tbsp)
- 1 pinch cinnamon
- 1 pinch ground cardamom
- 60 g fine oat flakes (4 tbsp)
- 70 g hemp seeds
- salt
- pepper
- 300 g Brussels sprouts
- 2 carrots
- 6 tbsp olive oil
- 2 oranges
- 2 chicory heads
- 0.5 Chinese cabbage
Instructions
- 1. Rinse the beans under cold running water and let them drain well.
- 2. Place the beans, hemp seed flour, soy drink, almond butter, and spices into a mixing bowl.
- 3. Blend the mixture with a hand blender until a soft dough forms.
- 4. Stir in the oat flakes and 60 grams of the hemp seeds into the dough.
- 5. Season the dough with salt and pepper to taste.
- 6. Moisten your hands with a little water and shape 12 small balls from the mixture.
- 7. Preheat your oven to 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3).
- 8. Place the balls on a baking sheet and bake them for 15 to 20 minutes until golden brown.
- 9. Turn the balls over halfway through the baking time.
- 10. Remove the outer leaves from the Brussels sprouts and wash them thoroughly.
- 11. Cut the washed Brussels sprouts in half.
- 12. Peel the carrots and slice them into thin diagonal pieces.
- 13. Heat two tablespoons of olive oil in a large frying pan.
- 14. Sauté the Brussels sprout halves over medium heat for three minutes.
- 15. Add the carrot slices and cook them together for another two minutes.
- 16. Season the vegetables with salt and pepper and remove them from the heat.
- 17. Peel one of the oranges and cut the flesh into fine segments.
- 18. Squeeze the juice from the second halved orange.
- 19. Clean and wash the chicory and Chinese cabbage.
- 20. Cut the vegetables into thin strips.
- 21. Toss the cut vegetables with the remaining oil and the orange juice.
- 22. Season the salad with salt and pepper to taste.
- 23. Divide the salad among four serving bowls.
- 24. Top the salad with the baked hemp seed balls, Brussels sprouts, carrots, and orange segments.
- 25. Sprinkle the remaining hemp seeds over the finished bowl.
