🍽️ Gold Bream Baked in Tomato Parchment Packets

Ingredients
- 4 Dorade (kitchen-ready, á 350 g)
- Salt
- Pepper (from the mill)
- 70 g Butter
- 500 g Cherry tomatoes
- 4 Garlic cloves
- 1 tsp Mustard seeds
- 1 unpeeled Lemon
- 4 tbsp Olive oil
- 6 Bay leaves
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the fish thoroughly and season the inside and outside with salt and pepper.
- 3. Cut four squares of parchment paper, each with sides of 30 by 30 centimeters.
- 4. Brush each paper square thinly with butter.
- 5. Wash the tomatoes and cut them in half.
- 6. Peel the garlic cloves and press the garlic pulp into a small bowl.
- 7. Add the mustard seeds, lemon juice, lemon zest, and oil to the bowl.
- 8. Whisk the ingredients for the seasoned oil well together.
- 9. Place each fish on a separate buttered parchment square.
- 10. Coat the fish thoroughly with the prepared seasoned oil.
- 11. Distribute the bay leaves and tomato halves around the fish on the paper.
- 12. Fold the parchment paper into tight packets and seal them.
- 13. Place the packets on a baking sheet.
- 14. Cook the fish in the preheated oven for 30 minutes.
- 15. At the end of the cooking time, increase the oven temperature to 250 degrees Celsius with top and bottom heat.
