🍽️ Crispy Sea Bass with Oven Potatoes

Ingredients
- 1 kg small waxy potatoes
- 6 sprigs thyme
- 1 red chili pepper
- 3 garlic cloves
- 5 tbsp olive oil
- 450 g red snapper fillet
- 0.5 bunch parsley
- 1 unwaxed lemon
- 3 carrots
- salt
- pepper
Instructions
- 1. Wash the potatoes under running water and pat them dry with a kitchen towel.
- 2. Place the dry potatoes on a baking sheet.
- 3. Cut the chili pepper in half lengthwise.
- 4. Remove the seeds from the chili pepper.
- 5. Finely chop the flesh of the chili.
- 6. Peel the garlic clove.
- 7. Chop the garlic finely.
- 8. Pluck the thyme leaves off the stems.
- 9. Mix the chili, garlic, and thyme in a bowl.
- 10. Add three tablespoons of oil to the spice mixture.
- 11. Add a pinch of salt.
- 12. Stir the mixture well.
- 13. Pour the seasoned oil mixture over the potatoes on the baking sheet.
- 14. Cover the potatoes with parchment paper.
- 15. Preheat the oven to 200 degrees Celsius.
- 16. Place the tray in the oven.
- 17. Bake the potatoes for 25 minutes.
- 18. Rinse the fish under cold water.
- 19. Pat the fish dry with kitchen paper.
- 20. Divide the fish into four equal portions.
- 21. Season the fish pieces with pepper.
- 22. Cut a ten-centimeter-long strip from the untreated lemon peel.
- 23. Finely chop the lemon peel.
- 24. Squeeze the lemon to obtain the juice.
- 25. Heat the remaining oil in a large pan.
- 26. Finely chop the parsley.
- 27. Add the parsley to the hot pan.
- 28. Add the chopped lemon peel to the pan.
- 29. Add the lemon juice to the pan.
- 30. Place the fish pieces in the pan.
- 31. Fry the fish over low heat.
- 32. Fry the first side for four minutes.
- 33. Turn the fish pieces.
- 34. Fry the second side for another four minutes.
- 35. Season the cooked fish with salt.
- 36. Peel the carrots.
- 37. Wash the peeled carrots.
- 38. Grate the carrots finely.
- 39. Take the potatoes out of the oven.
- 40. Serve the fish on plates.
- 41. Add the oven potatoes to the fish pieces.
- 42. Garnish the dish with the grated carrots.
