🥗 Fruity Gnocchi Salad with Peppers

Ingredients
- 2 red bell peppers
- 2 yellow bell peppers
- 1 onion
- 2 tbsp olive oil
- 100 ml vegetable broth from the jar
- salt
- pepper from the mill
- 1 tbsp white wine vinegar
- 400 g gnocchi
- 1 bunch chives
Instructions
- 1. Thoroughly wash the bell peppers.
- 2. Remove the seeds and white pith from the bell peppers.
- 3. Cut the bell peppers into quarters.
- 4. Dice the pepper pieces into small, uniform cubes.
- 5. Peel the onion.
- 6. Dice the onion into small pieces as well.
- 7. Heat the olive oil in a pan.
- 8. Add the diced peppers and onions to the hot pan.
- 9. Sauté the vegetables briefly until they become soft.
- 10. Deglaze the vegetables with the broth.
- 11. Let the mixture simmer for 2 to 3 minutes.
- 12. Season the sauce with salt to taste.
- 13. Add fresh ground pepper.
- 14. Add the white wine vinegar and stir.
- 15. Cook the gnocchi in a pot of salted water according to the package instructions.
- 16. Drain the gnocchi in a colander.
- 17. Let the gnocchi drain well.
- 18. Mix the drained gnocchi with the warm pepper mixture.
- 19. Rinse the chives under running water.
- 20. Shake the chives dry.
- 21. Cut the chives into fine rings.
- 22. Sprinkle the finished salad with the chive rings.
- 23. Plate the salad.
