  1. 1. Thoroughly wash the bell peppers.
  2. 2. Remove the seeds and white pith from the bell peppers.
  3. 3. Cut the bell peppers into quarters.
  4. 4. Dice the pepper pieces into small, uniform cubes.
  5. 5. Peel the onion.
  6. 6. Dice the onion into small pieces as well.
  7. 7. Heat the olive oil in a pan.
  8. 8. Add the diced peppers and onions to the hot pan.
  9. 9. Sauté the vegetables briefly until they become soft.
  10. 10. Deglaze the vegetables with the broth.
  11. 11. Let the mixture simmer for 2 to 3 minutes.
  12. 12. Season the sauce with salt to taste.
  13. 13. Add fresh ground pepper.
  14. 14. Add the white wine vinegar and stir.
  15. 15. Cook the gnocchi in a pot of salted water according to the package instructions.
  16. 16. Drain the gnocchi in a colander.
