🍽️ Homemade Gnocchi with Creamy Pepper Sauce

Ingredients
- 500 g floury potatoes
- salt
- 80 g flour
- 1 egg
- pepper
- nutmeg
- 2 red bell peppers
- 1 yellow bell pepper
- 2 sprigs thyme
- 1 onion
- 1 tbsp olive oil
- 150 g strained tomatoes
- 30 g parmesan (1 piece)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in salted water and boil them for about 25 minutes until tender.
- 3. Drain the water and let the potatoes drain and steam dry.
- 4. Peel the potatoes while they are still warm.
- 5. Press the potatoes through a potato ricer.
- 6. Mix the potatoes with flour and one egg.
- 7. Season the mixture with salt, pepper, and freshly grated nutmeg.
- 8. Shape the dough into several thin rolls with a diameter of about 1.5 centimeters.
- 9. Cut walnut-sized pieces from the rolls.
- 10. Shape the pieces into gnocchi.
- 11. Press a pattern into the gnocchi with a fork.
- 12. Wash the bell peppers.
- 13. Halve the bell peppers and remove the seeds.
- 14. Dice the peppers finely.
- 15. Wash the thyme and shake it dry.
- 16. Pluck the thyme leaves from the stems.
- 17. Peel the onion and chop it finely.
- 18. Heat oil in a pot.
- 19. Sauté the onions in it until translucent.
- 20. Add the diced peppers and fry them.
- 21. Add the tomatoes.
- 22. Season the sauce with salt, pepper, and thyme.
- 23. Let the sauce simmer for about 15 minutes.
- 24. Add the gnocchi to plenty of boiling salted water.
- 25. Cook the gnocchi over low heat for 10 to 15 minutes until done.
- 26. Drain the gnocchi.
- 27. Serve the gnocchi with the pepper sauce in deep plates.
- 28. Grate Parmesan cheese over the finished dishes.
