  1. 1. Wash the potatoes thoroughly.
  2. 2. Place the potatoes in salted water and boil them for about 25 minutes until tender.
  3. 3. Drain the water and let the potatoes drain and steam dry.
  4. 4. Peel the potatoes while they are still warm.
  5. 5. Press the potatoes through a potato ricer.
  6. 6. Mix the potatoes with flour and one egg.
  7. 7. Season the mixture with salt, pepper, and freshly grated nutmeg.
  8. 8. Shape the dough into several thin rolls with a diameter of about 1.5 centimeters.
  9. 9. Cut walnut-sized pieces from the rolls.
  10. 10. Shape the pieces into gnocchi.
  11. 11. Press a pattern into the gnocchi with a fork.
  12. 12. Wash the bell peppers.
  13. 13. Halve the bell peppers and remove the seeds.
  14. 14. Dice the peppers finely.
  15. 15. Wash the thyme and shake it dry.
  16. 16. Pluck the thyme leaves from the stems.
  17. 17. Peel the onion and chop it finely.
  18. 18. Heat oil in a pot.
  19. 19. Sauté the onions in it until translucent.
  20. 20. Add the diced peppers and fry them.
  21. 21. Add the tomatoes.
  22. 22. Season the sauce with salt, pepper, and thyme.
  23. 23. Let the sauce simmer for about 15 minutes.
  24. 24. Add the gnocchi to plenty of boiling salted water.
  25. 25. Cook the gnocchi over low heat for 10 to 15 minutes until done.
  26. 26. Drain the gnocchi.
  27. 27. Serve the gnocchi with the pepper sauce in deep plates.
  28. 28. Grate Parmesan cheese over the finished dishes.
