🍽️ Creamy Gnocchi with Green Asparagus

Ingredients
- 250 g asparagus
- 150 g snow peas (cleaned and washed)
- 4 spring onions (cleaned, washed and cut into finger-thick pieces)
- 1 tbsp butter
- 1 tbsp olive oil
- 200 g crème fraîche
- 1 tbsp lemon juice
- salt
- pepper
- 250 g fresh gnocchi (refrigerated section)
- 1 tbsp parsley (finely chopped)
Instructions
- 1. Peel the bottom three centimeters of the green asparagus.
- 2. Trim off the tough ends of the asparagus.
- 3. Cut the asparagus into diagonal pieces about two centimeters long.
- 4. Finely chop the spring onions.
- 5. Place the asparagus and the spring onions in a pan.
- 6. Sauté the vegetables until the onions are translucent.
- 7. Add the snow peas to the pan.
- 8. Continue to sauté the vegetables until the snow peas are cooked.
- 9. Stir the crème fraîche into the vegetables.
- 10. Let the sauce reduce for a short time.
- 11. Season the ragout with lemon juice, salt, and pepper.
- 12. Boil the gnocchi in salted water until they are cooked through.
- 13. Drain the gnocchi.
- 14. Pre-warm the serving plates.
- 15. Place the gnocchi on the plates.
- 16. Add the asparagus ragout to the gnocchi.
- 17. Finely chop the parsley.
- 18. Sprinkle the dish with the parsley.
