🍽️ Homemade Gnocchi with Tomato-Herb Gratin

Ingredients
- 1 kg floury potatoes
- salt
- 1 egg
- 200 g flour
- nutmeg
- 1 onion
- 1 garlic clove
- 300 g cherry tomatoes
- 3 sprigs sage
- 2 sprigs rosemary
- 2 tbsp olive oil
- 1 tsp tomato paste
- 125 ml dry white wine
- cayenne pepper
- 60 g grated parmesan
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Cook the potatoes for about 30 minutes until tender.
- 4. Drain the water.
- 5. Peel the warm potatoes.
- 6. Press the potatoes through a potato ricer.
- 7. Let the potato mixture steam briefly to cool down.
- 8. Add an egg and flour to the potato mixture.
- 9. Season the mixture with salt and ground nutmeg.
- 10. Knead everything into a smooth dough.
- 11. Dust your work surface with flour.
- 12. Shape the dough into finger-thick rolls.
- 13. Cut the rolls into pieces about 1.5 cm wide.
- 14. Roll each piece over the back of a fork to create a groove.
- 15. Cover the gnocchi with a kitchen towel.
- 16. Let the gnocchi rest for 10 minutes.
- 17. Bring a pot of salted water to a boil.
- 18. Add the gnocchi to the boiling water.
- 19. Cook the gnocchi for 8 to 10 minutes over gentle heat.
- 20. Remove the gnocchi from the water as soon as they float to the top.
- 21. Let the gnocchi drain.
- 22. Preheat the oven to 200 degrees Celsius fan-assisted.
- 23. Peel the onion and the garlic.
- 24. Finely dice the onion and garlic.
- 25. Wash the cherry tomatoes.
- 26. Halve the cherry tomatoes.
- 27. Wash the fresh herbs.
- 28. Shake the herbs dry.
- 29. Pick the leaves off the stems.
- 30. Finely chop about two-thirds of the herbs.
- 31. Heat oil in a pan.
- 32. Sauté the onion and garlic in the hot oil until translucent.
- 33. Stir tomato paste into the onion mixture.
- 34. Deglaze the pan with wine.
- 35. Fold in the halved tomatoes into the sauce.
- 36. Fold in the drained gnocchi into the sauce.
- 37. Season the mixture with salt and cayenne pepper.
- 38. Transfer the gnocchi mixture to a baking dish.
- 39. Spread the grated cheese evenly over the top.
- 40. Place the baking dish in the preheated oven.
- 41. Bake the dish for 10 to 15 minutes.
- 42. Sprinkle the remaining fresh herbs over the finished dish.
- 43. Serve the gnocchi gratin hot.
