  5. 5. Let the potatoes steam dry for a short moment.
  6. 6. Peel the cooled potatoes.
  7. 7. Press the potatoes through a potato ricer.
  8. 8. Let the pressed potatoes steam dry again briefly.
  9. 9. Add an egg and flour to the potatoes.
  10. 10. Season the mixture with salt and nutmeg.
  11. 11. Knead everything into a smooth dough.
  12. 12. Sprinkle some flour on your work surface.
  13. 13. Shape the dough into finger-thick rolls.
  14. 14. Cut the rolls into pieces about 1.5 cm wide.
  15. 15. Press the gnocchi lightly flat on both sides with the back of a fork.
  16. 16. Cover the finished gnocchi with a kitchen towel.
  17. 17. Let the gnocchi rest for a few minutes.
  18. 18. Add oil to a pot.

  20. 20. Fry the sage leaves until crispy in the hot oil.
