🍽️ Homemade Gnocchi with Creamy Gorgonzola Sauce

Ingredients
- 1 kg floury potatoes
- salt
- 1 egg
- 200 g flour
- nutmeg
- 50 ml oil
- 10 sage leaves
- 1 tbsp finely chopped onions
- 0.5 tsp finely chopped garlic
- 150 g Gorgonzola (in pieces)
- 250 ml milk (3.5% fat)
- flour (for working)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Cook the potatoes for about 30 minutes until tender.
- 4. Drain the cooking water.
- 5. Let the potatoes steam dry for a short moment.
- 6. Peel the cooled potatoes.
- 7. Press the potatoes through a potato ricer.
- 8. Let the pressed potatoes steam dry again briefly.
- 9. Add an egg and flour to the potatoes.
- 10. Season the mixture with salt and nutmeg.
- 11. Knead everything into a smooth dough.
- 12. Sprinkle some flour on your work surface.
- 13. Shape the dough into finger-thick rolls.
- 14. Cut the rolls into pieces about 1.5 cm wide.
- 15. Press the gnocchi lightly flat on both sides with the back of a fork.
- 16. Cover the finished gnocchi with a kitchen towel.
- 17. Let the gnocchi rest for a few minutes.
- 18. Add oil to a pot.
- 19. Heat the oil.
- 20. Fry the sage leaves until crispy in the hot oil.
- 21. Remove the sage leaves from the oil.
- 22. Place the sage leaves on kitchen paper.
- 23. Let the oil drain from the leaves.
- 24. Sauté the onions in the remaining oil until translucent.
- 25. Add the garlic to the onions.
- 26. Add the Gorgonzola to the onion mixture.
- 27. Melt the cheese slowly while stirring.
- 28. Add the milk to the cheese sauce.
- 29. Heat the sauce until the cheese is completely dissolved.
- 30. Season the sauce with nutmeg.
- 31. Bring a pot of salted water to a boil.
- 32. Add the gnocchi to the boiling water.
- 33. Cook the gnocchi for about 8 minutes.
- 34. Remove the gnocchi from the heat as soon as they float to the surface.
- 35. Serve the gnocchi with the Gorgonzola sauce.
- 36. Garnish the dish with the fried sage leaves.
