🍽️ Fresh Gnocchi Vegetable Salad

Ingredients
- 600 g Gnocchi (ready-made product)
- 300 g peas
- 1 bell pepper
- 2 bell peppers
- 1 bunch chives
- 6 tbsp tomato puree
- 3 tbsp balsamic vinegar
- 4 tbsp olive oil
- 1 bunch basil
- 2 tbsp capers
- salt
- pepper
Instructions
- 1. Cook the gnocchi according to the package instructions.
- 2. Add the peas to the gnocchi three minutes before the cooking time ends.
- 3. Drain the gnocchi and peas and let them drain well.
- 4. Halve the bell pepper and remove the seeds.
- 5. Wash the bell pepper thoroughly.
- 6. Cut the bell pepper into thick strips.
- 7. Dice the pepper strips into small pieces.
- 8. Finely chop the chives.
- 9. Finely chop the basil.
- 10. Mix the drained gnocchi with the peas.
- 11. Add the diced pepper to the mixture.
- 12. Fold in the chopped chives.
- 13. Whisk the tomato puree with the vinegar.
- 14. Season the sauce with salt and pepper.
- 15. Stir the oil into the sauce.
- 16. Fold the chopped basil into the sauce.
- 17. Let the sauce steep covered for one hour.
- 18. Sprinkle the capers over the salad shortly before serving.
