  1. 1. Place the glass noodles in a bowl and cover them with hot water. Wait until the noodles are soft, as indicated on the package.
  2. 2. Rinse the soft noodles under cold water. Let the water drain completely.
  3. 3. Take the black beans and rinse them in a sieve. Let them drain as well.
  4. 4. Peel the carrots. Cut them into very thin strips.
  5. 5. Wash the spring onions. Cut off the hard ends.
  6. 6. Cut the white parts of the spring onions into thin rings.
  7. 7. Cut the green parts of the spring onions into long, thin strips.
  8. 8. Place the green onion strips in a bowl of cold water. This will make them curl up.
  9. 9. Peel the garlic. Chop it finely.
  10. 10. Wash the cucumber. Cut it in half lengthwise.
  11. 11. Take a teaspoon and scoop the seeds out of the cucumber halves.
  12. 12. Cut the deseeded cucumber halves into long, thin strips.
  13. 13. Heat two tablespoons of oil in a pan.
  14. 14. Add the white onion rings and the chopped garlic to the hot pan.
  15. 15. Sauté the vegetables until they are soft.
  16. 16. Add the carrot strips and one tablespoon of water to the pan.
  17. 17. Place a lid on the pan.
  18. 18. Simmer the carrots for about five minutes until they are soft.
  19. 19. Take a large bowl.
  20. 20. Add the drained glass noodles to the bowl.
  21. 21. Add the drained black beans.
  22. 22. Add the sautéed carrots to the bowl.
  23. 23. Add the cucumber strips to the bowl.
  24. 24. Mix all ingredients in the bowl well together.
  25. 25. Season the salad with soy sauce.
  26. 26. Add the remaining sesame oil.
  27. 27. Add rice vinegar.
  28. 28. Season with pepper to your taste.
  29. 29. Take the green spring onion strips out of the cold water.
  30. 30. Garnish the finished salad with the curled green onions.
  31. 31. Serve the salad.
