  1. 1. Place the glass noodles in a large bowl.
  2. 2. Wash the zucchini thoroughly.
  3. 3. Cut the zucchini in half lengthwise.
  4. 4. Remove the soft inner part with a spoon.
  5. 5. Slice the zucchini halves into very thin strips.
  6. 6. Clean the spring onions and wash them.
  7. 7. Cut the spring onions into thin lengthwise strips as well.
  8. 8. Add the zucchini and spring onions to the noodles.
  9. 9. Pour boiling water over everything.
  10. 10. Let the mixture steep for three to four minutes.
  11. 11. Then drain the water in a colander.
  12. 12. Whisk together sesame oil, soy sauce, fruit vinegar, lemon juice, sugar, salt, and cayenne pepper in a small bowl.
  13. 13. Season the sauce to taste.
  14. 14. Mix the sauce with the drained noodles and vegetables.
  15. 15. Serve the dish immediately.
