  1. 1. Switch the oven to the grill function and preheat it.
  2. 2. Line a baking sheet with baking paper or lightly grease a casserole dish.
  3. 3. Divide the salmon fillet into four equal pieces.
  4. 4. Remove any bones and drizzle the fish with a little lemon juice.
  5. 5. Heat the oil in a pan.
  6. 6. Peel the onion and the garlic clove.
  7. 7. Chop the onion and garlic finely.
  8. 8. Sauté the onion and garlic mixture in the pan for a short time.
  9. 9. Add the remaining ingredients for the sauce.
  10. 10. Season the sauce generously to taste.
  11. 11. Let the sauce simmer briefly.
  12. 12. Stir in some fish stock if the sauce becomes too thick.
  13. 13. Brush the salmon pieces generously with the sauce.
  14. 14. Place the salmon on the prepared tray or in the dish.
  15. 15. Grill the fish for 10 to 15 minutes.
  16. 16. Turn the fish several times while grilling.
  17. 17. Brush the fish with the marinade again in between.
  18. 18. Dice the onion for the spinach finely.
  19. 19. Melt the butter in a separate pan.
  20. 20. Sauté the diced onion in the butter.
  21. 21. Wash the spinach thoroughly.
  22. 22. Add the washed spinach to the onion in the pan.
  23. 23. Sauté the spinach briefly.
  24. 24. Drain the white beans.
  25. 25. Add the beans to the spinach and warm them through.
  26. 26. Remove the stem ends from the cocktail tomatoes.
  27. 27. Slice the tomatoes.
  28. 28. Set the tomato slices aside.
  29. 29. Finely chop the garlic clove for the vegetables.
  30. 30. Season the spinach-bean mixture with the garlic clove and other spices.
  31. 31. Fold the tomato slices into the vegetables.
  32. 32. Plate the vegetables.
  33. 33. Place the grilled salmon pieces on top of the vegetables.
  34. 34. Serve the salmon with lemon wedges.
