🍽️ Grilled salmon fillet with glossy glaze, spinach and white beans

Ingredients
- 600 g salmon fillet
- lemon juice (for drizzling)
- 1 onion
- 1 garlic clove
- 2 tbsp oil
- 100 ml tomato puree
- 50 ml ketchup
- 100 ml honey
- 60 ml orange juice
- 1 tsp apple cider vinegar
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- pepper (from the mill)
- paprika powder
- fish stock (as needed)
- 1 onion
- 2 tbsp butter
- 300 g fresh spinach
- 1 can white beans
- 1 handful cocktail tomatoes
- 1 peeled garlic clove
- salt
- pepper (from the mill)
- nutmeg (to taste)
- 1 lemon (organic, cut into wedges)
Instructions
- 1. Switch the oven to the grill function and preheat it.
- 2. Line a baking sheet with baking paper or lightly grease a casserole dish.
- 3. Divide the salmon fillet into four equal pieces.
- 4. Remove any bones and drizzle the fish with a little lemon juice.
- 5. Heat the oil in a pan.
- 6. Peel the onion and the garlic clove.
- 7. Chop the onion and garlic finely.
- 8. Sauté the onion and garlic mixture in the pan for a short time.
- 9. Add the remaining ingredients for the sauce.
- 10. Season the sauce generously to taste.
- 11. Let the sauce simmer briefly.
- 12. Stir in some fish stock if the sauce becomes too thick.
- 13. Brush the salmon pieces generously with the sauce.
- 14. Place the salmon on the prepared tray or in the dish.
- 15. Grill the fish for 10 to 15 minutes.
- 16. Turn the fish several times while grilling.
- 17. Brush the fish with the marinade again in between.
- 18. Dice the onion for the spinach finely.
- 19. Melt the butter in a separate pan.
- 20. Sauté the diced onion in the butter.
- 21. Wash the spinach thoroughly.
- 22. Add the washed spinach to the onion in the pan.
- 23. Sauté the spinach briefly.
- 24. Drain the white beans.
- 25. Add the beans to the spinach and warm them through.
- 26. Remove the stem ends from the cocktail tomatoes.
- 27. Slice the tomatoes.
- 28. Set the tomato slices aside.
- 29. Finely chop the garlic clove for the vegetables.
- 30. Season the spinach-bean mixture with the garlic clove and other spices.
- 31. Fold the tomato slices into the vegetables.
- 32. Plate the vegetables.
- 33. Place the grilled salmon pieces on top of the vegetables.
- 34. Serve the salmon with lemon wedges.
