  2. 2. Rinse the chicken breast fillets under cold water.
  3. 3. Pat the fillets dry with a kitchen towel.
  4. 4. Place the fillets into the prepared baking dish.
  5. 5. Peel the garlic clove and the shallot.
  6. 6. Finely chop the garlic and shallot.
  7. 7. Rinse the lemon under hot water.
  8. 8. Dry the lemon.
  9. 9. Grate the lemon zest.
  10. 10. Squeeze the lemon juice.
  11. 11. Wash the tarragon.
  12. 12. Shake the tarragon dry.
  13. 13. Pluck the tarragon leaves from the stems.
  14. 14. Set aside one tablespoon of tarragon leaves for later.
  15. 15. Finely chop the remaining tarragon.
  16. 16. Mix the honey with the lemon juice.
  17. 17. Add the lemon zest to the honey mixture.
  18. 18. Add the chopped tarragon to the honey mixture.
  19. 19. Add the chopped shallot to the honey mixture.
  20. 20. Add the chopped garlic to the honey mixture.
  21. 21. Season the marinade with salt.
  22. 22. Season the marinade with pepper.
  23. 23. Preheat the oven to 200 °C (180 °C fan or gas mark 3).
  24. 24. Brush the chicken fillets with the marinade.

  26. 26. Bake the chicken breast fillets for 30 to 35 minutes.
  27. 27. Brush the fillets with the remaining marinade repeatedly during cooking.
  28. 28. Roughly chop the reserved tarragon leaves.
  29. 29. Sprinkle the chopped tarragon over the finished chicken breast fillets.
