🍽️ Honey-glazed chicken breast

Ingredients
- 1 tbsp rapeseed oil
- 640 g chicken breast fillet (4 chicken breast fillets)
- 2 garlic cloves
- 1 shallot
- 1 organic lemon
- 4 sprigs tarragon
- 4 tbsp honey
- salt
- pepper
Instructions
- 1. Brush a baking dish lightly with oil.
- 2. Rinse the chicken breast fillets under cold water.
- 3. Pat the fillets dry with a kitchen towel.
- 4. Place the fillets into the prepared baking dish.
- 5. Peel the garlic clove and the shallot.
- 6. Finely chop the garlic and shallot.
- 7. Rinse the lemon under hot water.
- 8. Dry the lemon.
- 9. Grate the lemon zest.
- 10. Squeeze the lemon juice.
- 11. Wash the tarragon.
- 12. Shake the tarragon dry.
- 13. Pluck the tarragon leaves from the stems.
- 14. Set aside one tablespoon of tarragon leaves for later.
- 15. Finely chop the remaining tarragon.
- 16. Mix the honey with the lemon juice.
- 17. Add the lemon zest to the honey mixture.
- 18. Add the chopped tarragon to the honey mixture.
- 19. Add the chopped shallot to the honey mixture.
- 20. Add the chopped garlic to the honey mixture.
- 21. Season the marinade with salt.
- 22. Season the marinade with pepper.
- 23. Preheat the oven to 200 °C (180 °C fan or gas mark 3).
- 24. Brush the chicken fillets with the marinade.
- 25. Place the baking dish in the preheated oven.
- 26. Bake the chicken breast fillets for 30 to 35 minutes.
- 27. Brush the fillets with the remaining marinade repeatedly during cooking.
- 28. Roughly chop the reserved tarragon leaves.
- 29. Sprinkle the chopped tarragon over the finished chicken breast fillets.
