🍽️ Glazed Tuna Cubes

Ingredients
- 2 sheets gelatin
- 20 g ginger (1 piece)
- 2 tsp soy sauce
- 400 g tuna fillet (sushi quality)
- 0.5 lemon
- 1 tsp liquid, mild honey
- salt
- 2 tsp wasabi paste (from the tube)
- 2 tbsp wasabi tobiko or other caviar
- black sesame seeds
Instructions
- 1. Place the gelatin in a bowl of cold water for about 10 minutes.
- 2. Peel the ginger and grate it finely directly into a tea strainer.
- 3. Squeeze the grated ginger with a teaspoon and collect the juice.
- 4. Take one teaspoon of the ginger juice and stir it in a bowl with the soy sauce.
- 5. Cut the tuna into cubes with a side length of about 1.5 centimeters.
- 6. Distribute the tuna cubes onto eight small bowls.
- 7. Lightly brush each tuna cube with the ginger-soy sauce using a brush.
- 8. Squeeze the lemon and reserve one teaspoon of juice.
- 9. Combine 75 milliliters of water, the lemon juice, and the honey in a pot.
- 10. Add a pinch of salt and bring the mixture to a boil.
- 11. Remove the pot from the heat.
- 12. Squeeze the soaked gelatin well.
- 13. Dissolve the gelatin in the hot liquid.
- 14. Add the gelatin mixture along with the wasabi paste to a bowl.
- 15. Whisk the mixture with the beaters of the hand mixer at medium speed for about 7 minutes until it becomes a fluffy foam.
- 16. Place some of the wasabi foam on each tuna cube.
- 17. Garnish the dish with wasabi tobiko and some black sesame seeds.
- 18. Serve the tuna cubes immediately.
