🍽️ Glazed Radishes with Greens in Sauce

Ingredients
- 800 g radishes (with greens as desired)
- 80 g butter
- 2 tbsp sugar
- 4 tbsp dry sherry
- 50 ml vegetable broth (as needed)
- salt
- pepper (from the mill)
- parsley (for garnishing, as desired)
Instructions
- 1. Wash the radishes thoroughly.
- 2. Cut off the green leafy tops.
- 3. Save the greens for the sauce.
- 4. Halve some of the radishes.
- 5. Melt the butter in a pan.
- 6. Add the sugar to the melting butter.
- 7. Stir the sugar over medium heat until it melts.
- 8. Add the radishes to the pan.
- 9. Fry everything, stirring, for 2 minutes.
- 10. Deglaze the dish with sherry.
- 11. Cover the pan with a lid.
- 12. Cook the radishes for 8 to 10 minutes until tender-crisp.
- 13. Add the prepared greens 2 minutes before the end of the cooking time.
- 14. Stir the dish occasionally.
- 15. Add some broth if necessary.
- 16. Season with salt and pepper.
- 17. Garnish the finished sauce with parsley as desired.
