  1. 1. Wash the radishes thoroughly.
  2. 2. Cut off the green leafy tops.
  3. 3. Save the greens for the sauce.
  4. 4. Halve some of the radishes.
  5. 5. Melt the butter in a pan.
  6. 6. Add the sugar to the melting butter.
  7. 7. Stir the sugar over medium heat until it melts.
  8. 8. Add the radishes to the pan.
  9. 9. Fry everything, stirring, for 2 minutes.
  10. 10. Deglaze the dish with sherry.
  11. 11. Cover the pan with a lid.
  12. 12. Cook the radishes for 8 to 10 minutes until tender-crisp.
  13. 13. Add the prepared greens 2 minutes before the end of the cooking time.
  14. 14. Stir the dish occasionally.
  15. 15. Add some broth if necessary.
  16. 16. Season with salt and pepper.
  17. 17. Garnish the finished sauce with parsley as desired.
