  2. 2. Add the butter and milk to the bowl.
  3. 3. Add the egg yolks.
  4. 4. Mix the ingredients using the dough hooks of your hand mixer on low speed for 2 to 3 minutes.
  5. 5. Add the remaining flour.
  6. 6. Knead the dough by hand until it is smooth and pliable.
  7. 7. If necessary, add a little more flour or milk to achieve the right consistency.
  8. 8. Cover the bowl with a cloth and let the dough rest for 15 minutes.
  9. 9. Work the dough on a lightly floured surface.
  10. 10. Roll out the dough to a thickness of about 1.5 centimeters.
  11. 11. Cut circles out of the dough using a 7-centimeter cutter.
  12. 12. Cut a hole with a diameter of about 2 centimeters in the center of each circle.
  13. 13. Place the shaped doughnuts on a floured surface.
  14. 14. Cover the doughnuts with a cloth.
  15. 15. Let the doughnuts rise for 1 hour.
  16. 16. Heat the oil in the deep fryer to 170 degrees Celsius.
  17. 17. Fry the doughnuts in batches for 2 to 3 minutes.
  18. 18. Turn the doughnuts once while frying.
  19. 19. Place the finished doughnuts on a rack to drain.
  20. 20. Roll the still warm doughnuts in sugar.
