🍽️ Aromatic Rice with Peppers

Ingredients
- 2 small yellow bell peppers
- 100 g mixed, roughly chopped nuts (to taste)
- 2 tbsp pine nuts
- 1 sachet saffron
- 3 tbsp ghee
- 1 tsp cumin (cumin)
- 400 g basmati rice
- 2 tbsp raisins
- salt
- pepper (from the mill)
- 2 tbsp chopped parsley
Instructions
- 1. Wash the peppers thoroughly.
- 2. Cut the peppers in half.
- 3. Remove the seeds and the white inner membranes.
- 4. Dice the pepper flesh into fine cubes.
- 5. Place the rice in a sieve.
- 6. Rinse the rice under running water.
- 7. Let the water drain off well.
- 8. Melt the butter in a pot.
- 9. Add the cumin.
- 10. Fry the spice briefly.
- 11. Stir in the saffron.
- 12. Add the drained rice.
- 13. Sweat the rice while stirring for a few minutes.
- 14. Stir in the raisins.
- 15. Add the pepper cubes.
- 16. Lightly salt the mixture.
- 17. Pour in 700 milliliters of water.
- 18. Bring the mixture to a boil.
- 19. Reduce the heat to the lowest setting.
- 20. Let the rice swell for about 20 minutes.
- 21. Place the pine nuts in a frying pan.
- 22. Toast the pine nuts without fat.
- 23. Use medium heat for this.
- 24. Season the rice with salt.
- 25. Season the rice with pepper.
- 26. Stir in the parsley.
- 27. Add the chopped nuts.
- 28. Fold in the toasted pine nuts.
