🍽️ Spiced Rice with Mussels

Ingredients
- 500 g mussels
- 250 g tomatoes (peeled, seeded and diced)
- 200 g green beans
- 3 shallots (chopped)
- 2 garlic cloves
- 0.5 tsp turmeric
- 0.5 tsp paprika powder
- 5 coriander seeds
- 2 cloves
- 3 allspice berries
- 2 cardamom pods
- 0.333 cinnamon stick
- 0.5 tsp nutmeg (freshly grated)
- 3 tbsp olive oil
- 160 g basmati rice
- 350 ml vegetable broth
- salt
- pepper (from the mill)
- parsley (1 tbsp chopped each)
- coriander (1 tbsp chopped each)
Instructions
- 1. Clean the mussels very thoroughly.
- 2. Discard any mussels that are already open.
- 3. Crush all whole spices finely using a mortar and pestle.
- 4. Heat oil in a pot.
- 5. Sauté the shallots, pressed garlic, and spices briefly.
- 6. Add the diced tomatoes.
- 7. Cook them together for a few minutes.
- 8. Pour in the broth.
- 9. Stir in the washed rice.
- 10. Bring everything to a boil.
- 11. Reduce the heat to the lowest setting.
- 12. Cover the pot.
- 13. Let the rice cook for about 5 minutes.
- 14. Now add the mussels and the peeled beans.
- 15. Simmer everything for another 15 minutes.
- 16. Remove the pot from the heat.
- 17. Let the dish rest for about 10 minutes to absorb the liquid.
- 18. Season the rice with salt and pepper
