🍽️ Spiced Rice with Scallops

Ingredients
- 2 tbsp oil
- 2 tsp turmeric
- 0.5 tsp garam masala
- 250 g long-grain rice
- 600 ml fish stock
- 300 g scallop meat
- salt
- pepper (from the mill)
- 40 g melted butter
- 2 tbsp raisins
- 2 tbsp cashew nuts
- lemon juice
Instructions
- 1. Heat oil in a pan or pot over medium heat.
- 2. Add the chopped onions and spice mix to the hot oil.
- 3. Sauté the onions and spices briefly until fragrant.
- 4. Add the rice to the pan and continue to simmer for one minute.
- 5. Stir constantly so that every grain of rice is coated with the spices.
- 6. Pour in the meat or vegetable stock.
- 7. Bring the mixture to a boil.
- 8. Reduce the heat, cover the pot, and let the rice simmer for about 20 minutes.
- 9. Check if the rice has absorbed all the liquid.
- 10. Five minutes before the end of the cooking time, add the raisins and scallops.
- 11. Let everything finish cooking together.
- 12. Remove the pot from the heat.
- 13. Stir in the melted butter and cashew nuts.
- 14. Heat the mixture over moderate heat for another one to two minutes.
- 15. Season the dish to taste with lemon juice.
