  1. 1. Heat oil in a pan or pot over medium heat.
  2. 2. Add the chopped onions and spice mix to the hot oil.
  3. 3. Sauté the onions and spices briefly until fragrant.
  4. 4. Add the rice to the pan and continue to simmer for one minute.
  5. 5. Stir constantly so that every grain of rice is coated with the spices.
  6. 6. Pour in the meat or vegetable stock.
  7. 7. Bring the mixture to a boil.
  8. 8. Reduce the heat, cover the pot, and let the rice simmer for about 20 minutes.
  9. 9. Check if the rice has absorbed all the liquid.
  10. 10. Five minutes before the end of the cooking time, add the raisins and scallops.
  11. 11. Let everything finish cooking together.
  12. 12. Remove the pot from the heat.
  13. 13. Stir in the melted butter and cashew nuts.
  14. 14. Heat the mixture over moderate heat for another one to two minutes.
  15. 15. Season the dish to taste with lemon juice.
