🍰 Homemade Spiced Cookies for Cutting Out

Ingredients
- 100 g soft butter
- 75 g raw cane sugar
- 75 g beet syrup
- 450 g spelt flour Type 1050 (+ 1 tbsp for working)
- 1 tsp baking powder
- 1 pinch salt
- 1 tsp ginger powder
- 1 tsp cinnamon powder
- 0.25 tsp cardamom
- 1 pinch ground cloves
- 1 pinch allspice
- 1 egg
- 125 powdered sugar from raw cane sugar
- 2 tbsp lemon juice
- 25 g sugar pearls
Instructions
- 1. Put butter, sugar, and molasses into a saucepan.
- 2. Melt the mixture over low heat.
- 3. Let the mixture cool down briefly.
- 4. Add flour, baking powder, salt, spices, and one egg to a large bowl.
- 5. Pour the cooled syrup mixture over the dry ingredients.
- 6. Knead everything into a firm dough.
- 7. If the dough is too sticky, add a little more flour.
- 8. Ensure the dough is firm and moldable.
- 9. Dust a work surface with flour.
- 10. Roll out the dough to about 4 mm thickness.
- 11. Cut out stars and fir trees using cookie cutters.
- 12. Place the cookies on a baking sheet lined with baking paper.
- 13. Use a wooden stick to poke a small hole in cookies intended for the tree.
- 14. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 15. Bake the cookies for about 15 minutes.
- 16. Remove the tray from the oven.
- 17. Let the cookies cool down completely.
- 18. Mix powdered sugar with lemon juice to form a thick glaze.
- 19. Brush the cooled cookies with the glaze.
- 20. Decorate the cookies with lines as desired.
- 21. Immediately sprinkle the wet glaze with sugar pearls.
