Ingredients
- 2 tsp psyllium husks
- 200 g spelt flour Type 630 from Donath (available at Reformhaus®)
- 2 tsp cumin-coriander-nutmeg spice mix from Brecht (available at Reformhaus® ())
- 1 tsp cinnamon from Brecht (available at Reformhaus®)
- 2 tsp baking powder from Natura (available at Reformhaus®)
- 1 pinch sea salt from Brecht (available at Reformhaus® ())
- 1 organic lemon
- 1 tsp Reformhaus® (Plus rosehip powder)
- 80 g coconut oil from Vitaquell (available at Reformhaus®)
- 60 g maple syrup from Rapunzel (available at Reformhaus®)
- 2 tbsp brown almond butter from Rapunzel (available at Reformhaus®)
- 20 almond kernels from Lihn (available at Reformhaus®)
Instructions
- 1. Pour five tablespoons of cold water into a small bowl.
- 2. Stir psyllium husks into the water.
- 3. Let the mixture swell for ten minutes.
- 4. Add spelt flour, spice mix, cinnamon, baking powder, and salt to a large bowl.
- 5. Rinse the lemon under hot water and dry it.
- 6. Grate the lemon zest.
- 7. Add the lemon zest, rosehip powder, coconut oil, maple syrup, almond butter, and the swollen psyllium husks to the flour mixture.
- 8. Knead everything into a smooth dough.
- 9. Cover the dough.
- 10. Let the dough rest in the refrigerator for about thirty minutes.
- 11. Dust the work surface with a little spelt flour.
- 12. Roll out the dough to about half a centimeter thick.
- 13. Cut out cookies using cookie cutters or a glass.
- 14. Place the cookies with some space between them on a baking sheet lined with baking paper.
- 15. Place an almond on each cookie.
- 16. Press the almond down slightly.
- 17. Preheat the oven to two hundred degrees Celsius.
- 18. Bake the cookies for about twelve minutes in the oven.
- 19. Let the cookies cool on a wire rack.
- 20. Enjoy the cookies.
