  1. 1. Pour five tablespoons of cold water into a small bowl.
  2. 2. Stir psyllium husks into the water.
  3. 3. Let the mixture swell for ten minutes.
  4. 4. Add spelt flour, spice mix, cinnamon, baking powder, and salt to a large bowl.
  5. 5. Rinse the lemon under hot water and dry it.
  6. 6. Grate the lemon zest.
  7. 7. Add the lemon zest, rosehip powder, coconut oil, maple syrup, almond butter, and the swollen psyllium husks to the flour mixture.
  8. 8. Knead everything into a smooth dough.
  9. 9. Cover the dough.
  10. 10. Let the dough rest in the refrigerator for about thirty minutes.
  11. 11. Dust the work surface with a little spelt flour.
  12. 12. Roll out the dough to about half a centimeter thick.
  13. 13. Cut out cookies using cookie cutters or a glass.
  14. 14. Place the cookies with some space between them on a baking sheet lined with baking paper.
  15. 15. Place an almond on each cookie.
  16. 16. Press the almond down slightly.
  17. 17. Preheat the oven to two hundred degrees Celsius.
  18. 18. Bake the cookies for about twelve minutes in the oven.
  19. 19. Let the cookies cool on a wire rack.
