Ingredients
- 1 tbsp rapeseed oil
- 1 cinnamon stick
- 1 tbsp allspice berries
- 1 tbsp peppercorns
- 2 bay leaves
- 2 nutmeg flowers
- 6 cloves
Instructions
- 1. Place the allspice berries and pepper into a mortar.
- 2. Gently crush the spices with the pestle to break them open.
- 3. Add the crushed spices along with cinnamon, bay leaves, mace, and cloves to a small saucepan.
- 4. Pour the oil into the saucepan with the spices.
- 5. Place the saucepan on the stove and set the heat to very low.
- 6. Warm the oil for about 10 minutes without letting it boil.
- 7. Remove the saucepan from the heat and let the oil cool down slightly.
- 8. Pour the warm oil into a clean, sterile glass jar.
- 9. Seal the jar tightly with a lid.
- 10. Store the jar in a dark and cool place.
- 11. Let the oil infuse for 2 weeks to allow the flavors to develop.
- 12. Strain the finished oil through a fine sieve to remove the spices.
- 13. Use the oil for frying meat dishes with Asian or Indian flavors.
