  1. 1. Place the allspice berries and pepper into a mortar.
  2. 2. Gently crush the spices with the pestle to break them open.
  3. 3. Add the crushed spices along with cinnamon, bay leaves, mace, and cloves to a small saucepan.
  4. 4. Pour the oil into the saucepan with the spices.
  5. 5. Place the saucepan on the stove and set the heat to very low.
  6. 6. Warm the oil for about 10 minutes without letting it boil.
  7. 7. Remove the saucepan from the heat and let the oil cool down slightly.
  8. 8. Pour the warm oil into a clean, sterile glass jar.
  9. 9. Seal the jar tightly with a lid.
  10. 10. Store the jar in a dark and cool place.
  11. 11. Let the oil infuse for 2 weeks to allow the flavors to develop.
  12. 12. Strain the finished oil through a fine sieve to remove the spices.
  13. 13. Use the oil for frying meat dishes with Asian or Indian flavors.
