  1. 1. Preheat the oven to 200 degrees Celsius with fan setting.
  2. 2. Rinse the rosemary briefly under cold water.
  3. 3. Shake the rosemary dry.
  4. 4. Pluck the needles from the rosemary stems.
  5. 5. Chop the rosemary needles finely.
  6. 6. Place the chopped needles, the coriander, and about 50 milliliters of oil into a small bowl.
  7. 7. Remove the outer layers from the garlic bulbs.
  8. 8. Halve the garlic bulbs horizontally.
  9. 9. Separate 5 to 6 cloves from the bulbs.
  10. 10. Peel the separated cloves.
  11. 11. Chop the cloves finely.
  12. 12. Stir the chopped cloves into the herb oil mixture.
  13. 13. Season the mixture with salt and pepper.
  14. 14. Rinse the meat briefly.
  15. 15. Pat the meat dry with a kitchen towel.
  16. 16. Heat the remaining oil in a pan.
  17. 17. Sear the meat in the hot pan on all sides.
  18. 18. Line a baking sheet with baking paper.
  19. 19. Place the seared meat on the prepared baking sheet.
  20. 20. Brush the meat generously with the spiced oil.
  21. 21. Place the remaining garlic bulbs on the sheet.
  22. 22. Roast the meat in the oven for about 30 minutes.
  23. 23. Serve the roast with flatbread and a mint yogurt dip.
