🍽️ Herb-Infused Beef Roast

Ingredients
- 6 sprigs rosemary
- 1 tbsp coriander seeds
- 70 ml olive oil
- 2 fresh garlic bulbs
- salt
- pepper (from the mill)
- 1 kg beef (e.g. rump)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Rinse the rosemary briefly under cold water.
- 3. Shake the rosemary dry.
- 4. Pluck the needles from the rosemary stems.
- 5. Chop the rosemary needles finely.
- 6. Place the chopped needles, the coriander, and about 50 milliliters of oil into a small bowl.
- 7. Remove the outer layers from the garlic bulbs.
- 8. Halve the garlic bulbs horizontally.
- 9. Separate 5 to 6 cloves from the bulbs.
- 10. Peel the separated cloves.
- 11. Chop the cloves finely.
- 12. Stir the chopped cloves into the herb oil mixture.
- 13. Season the mixture with salt and pepper.
- 14. Rinse the meat briefly.
- 15. Pat the meat dry with a kitchen towel.
- 16. Heat the remaining oil in a pan.
- 17. Sear the meat in the hot pan on all sides.
- 18. Line a baking sheet with baking paper.
- 19. Place the seared meat on the prepared baking sheet.
- 20. Brush the meat generously with the spiced oil.
- 21. Place the remaining garlic bulbs on the sheet.
- 22. Roast the meat in the oven for about 30 minutes.
- 23. Serve the roast with flatbread and a mint yogurt dip.
