  1. 1. Wash the lemon under hot water.
  2. 2. Peel the outer layer of the lemon peel thinly.
  3. 3. Wash the thyme sprigs under running water.
  4. 4. Dry the thyme leaves and sprigs with a kitchen towel.
  5. 5. Warm the olive oil in a small pot to 40 degrees Celsius.
  6. 6. Add the thyme sprigs and the lemon peel to the warm oil.
  7. 7. Remove the pot from the heat so the oil does not heat up further.
  8. 8. Place the thyme sprigs and the lemon peel into a previously sterilized jar.
  9. 9. Pour the warm olive oil through a funnel into the jar.
  10. 10. Seal the jar tightly with a lid.
  11. 11. Let the oil infuse for two to three weeks before using it.
