  1. 1. Wash the potatoes thoroughly under running water.
  2. 2. Clean the spring onions and wash them as well.
  3. 3. Cut the spring onions diagonally into slices about 2 cm wide.
  4. 4. Heat ghee (clarified butter) in a pot.
  5. 5. Add the potatoes and spring onions to the pot.
  6. 6. Sauté the vegetables briefly.
  7. 7. Pour in 100 ml of water.
  8. 8. Sprinkle bay leaves, saffron, cumin, and 2 tablespoons of coriander over the mixture.
  9. 9. Season everything with salt and pepper.
  10. 10. Preheat the oven to 200 degrees Celsius.
  11. 11. Place the pot with the lid on into the preheated oven.
  12. 12. Let the potatoes cook for about 30 minutes.
  13. 13. Remove the lid from the pot.
  14. 14. Let the potatoes cook for another 15 minutes with the lid off.
  15. 15. Add the remaining 2 tablespoons of coriander.
  16. 16. Add some lime juice.
  17. 17. Portion the potatoes into small bowls.
  18. 18. Garnish the dish with fresh coriander.
  19. 19. Serve the potatoes hot.
