🍽️ Spiced Oven Potatoes

Ingredients
- 1 kg potatoes
- 1 bunch spring onions
- 3 tbsp ghee
- 2 bay leaves
- 1 small container saffron threads
- 2 tsp cumin (ground)
- 4 tbsp coriander leaves
- salt
- pepper (from the mill)
- 1 tbsp lime juice
- coriander leaves (for garnish)
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Clean the spring onions and wash them as well.
- 3. Cut the spring onions diagonally into slices about 2 cm wide.
- 4. Heat ghee (clarified butter) in a pot.
- 5. Add the potatoes and spring onions to the pot.
- 6. Sauté the vegetables briefly.
- 7. Pour in 100 ml of water.
- 8. Sprinkle bay leaves, saffron, cumin, and 2 tablespoons of coriander over the mixture.
- 9. Season everything with salt and pepper.
- 10. Preheat the oven to 200 degrees Celsius.
- 11. Place the pot with the lid on into the preheated oven.
- 12. Let the potatoes cook for about 30 minutes.
- 13. Remove the lid from the pot.
- 14. Let the potatoes cook for another 15 minutes with the lid off.
- 15. Add the remaining 2 tablespoons of coriander.
- 16. Add some lime juice.
- 17. Portion the potatoes into small bowls.
- 18. Garnish the dish with fresh coriander.
- 19. Serve the potatoes hot.
