🍽️ Spiced Meatloaf with Apricots

Ingredients
- 1 tbsp orange liqueur
- 150 g dried apricots
- 1 stale roll
- 2 bunches spring onions
- 2 red chili peppers
- 2 shallots
- 3 garlic cloves
- 1 tbsp butter
- 75 g cashew nuts
- 3 eggs
- 750 g minced beef
- 0.5 tsp cinnamon
- 0.25 ground cloves
- 0.5 tsp freshly grated ginger
- salt
- pepper (from the mill)
- oil (for frying and brushing)
- 100 ml vegetable broth (instant)
- 1 tbsp liquid honey
Instructions
- 1. Cut five apricots into wedges and dice the remaining ones.
- 2. Stir orange liqueur with 50 milliliters of lukewarm water.
- 3. Add the apricots to the liquid and let them soak.
- 4. Soak the bread rolls in lukewarm water.
- 5. Clean and wash the spring onions.
- 6. Cut the spring onions into 8 to 10 centimeter long pieces.
- 7. Slice the chili peppers lengthwise.
- 8. Remove the seeds from the chili peppers.
- 9. Wash the deseeded chili peppers.
- 10. Finely chop the chili peppers.
- 11. Peel the shallots and the garlic.
- 12. Finely chop the shallots.
- 13. Press the garlic through a garlic press.
- 14. Heat butter in a pan.
- 15. Sauté the shallots in the hot butter until translucent.
- 16. Add the pressed garlic.
- 17. Roast the cashew nuts in a pan without fat.
- 18. Let the nuts cool down.
- 19. Roughly chop the cooled nuts.
- 20. Squeeze the soaked bread roll.
- 21. Mix the bread roll with chili, shallots, garlic, diced apricots, nuts, and eggs.
- 22. Add the minced meat to the mixture.
- 23. Season everything with cinnamon, cloves, ginger, salt, and pepper.
- 24. Knead the ingredients into a meatloaf mixture.
- 25. Shape the mixture into an oblong loaf.
- 26. Place the loaf in an oiled casserole dish.
- 27. Brush the loaf with oil.
- 28. Make cross-shaped cuts on the surface.
- 29. Decorate the loaf with the apricot wedges.
- 30. Preheat the oven to 200 degrees.
- 31. Bake the meatloaf for approx. 45 minutes.
- 32. Add spring onions and broth when 10 minutes of baking time remain.
- 33. Brush the meatloaf with honey.
- 34. Finish baking the loaf.
